Our ground beef tends to be leaner because our cattle do not go through the high-calorie finishing process. Lean usually means less flavor, but because we utilize the whole animal, we maintain the flavor and texture from top-tier cuts. Our ground beef typically clocks in at 87% - 93% lean. Although, with a single animal origin, our percent lean can vary!

2. All-In-One Utilization

Most ground beef is made with the “leftovers” - anything left after the best cuts (steaks, ribs, etc.) have been trimmed away. We do it differently, combining ALL premium cuts into a single delicious package. We grind and blend steaks, briskets, roasts, tenderloins, rib meat and trim. You can taste the difference!
